Meat Characteristics

Gamey - Full flavoured

Meat is as tender as other breeds of lamb but with the fuller flavour of mutton.

Cuts are smaller due to sheep size, so specific cuts are a major selling point.

Their external fat layer for weather protection means no marbling in the flesh, resulting in a healthier cut of meat.

Born here, grown here, butchered here, vac packed here, Borrowdale Herdwick meat is fully traceable.
Please remember that Herdwicks are small sheep, therefore the joints you receive may be smaller in size than you expect, especially if you compare them to supermarket lamb. However, the superior taste of our Herdwick compensates for any lack of size. As the saying goes 'there's good stuff in little stock'.
